Carrot Cake

Ingredients

  • 2 c. flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 1/3 tsp baking soda
  • 1 1/3 c. grated carrots
  • 1/3 c. chopped nuts (opt)
  • 1/3 c. oil
  • 4 eggs
  • 2 tsp vanilla
  • 1/2 c. juice
  • 1/2 c. sugar
  • 1/2 c. brown sugar
  • 1/2 c. crushed pineapple (drain)

Instructions

  1. Mix flour, salt, baking powder, cinnamon, and baking soda.
  2. Add grated carrots, nuts, and pineapple.
  3. Mix well.
  4. Add eggs, vanilla, juice, and sugars.
  5. Mix until smooth.
  6. Bake at 375°F in a 9x13 pan for 40-45 minutes.
