Cheesy Chicken

Ingredients

  • 1 pkg. chicken breast tenders
  • 1 small onion, chopped
  • 2 Tbs. oil
  • 6 mushrooms, chopped
  • 1 cup milk
  • 1 cup sharp cheddar cheese, grated
  • 2 Tbs. spicy mustard
  • 2 Tbs. flour
  • Salt and pepper

Instructions

  1. Set oven to 350 degrees.
  2. Cut chicken into bite-size pieces. Heat oil in a pan, fry until the onions are soft and chicken is lightly browned. Remove chicken and onion and place in an ovenproof dish. Keep warm.
  3. Reserve the oil and juices in the pan. Add the flour to the remaining juices in the pan and milk. Keep stirring constantly until the sauce has thickened.
  4. Add the cheese and mustard. Stir until the cheese has melted.
  5. Salt and pepper to taste.
  6. Pour sauce over the chicken. Bake for 45 minutes.
