Granny Cake or Hummingbird Cake

Ingredients

  • 3 cups of flour
  • 2 cups of sugar
  • 1 tsp. of baking soda
  • 1/2 tsp. of salt
  • 3 eggs
  • 3/4 cup of margarine
  • 2 cups of mashed bananas
  • 1 (8 oz.) can of crushed pineapple
  • 1 cup of finely chopped pecans
  • Powdered sugar (optional)

Instructions

  1. Stir together flour, sugar, baking soda, and salt.
  2. In a large bowl, beat margarine for 30 seconds.
  3. Add eggs, flour mixture, bananas, pineapple, and vanilla.
  4. Beat on low speed until combined, then on medium for one minute.
  5. Fold in pecans.
  6. Grease and flour a 10-inch tube pan.
  7. Bake at 325 degrees for 65 minutes or until a toothpick comes out clean.
  8. Cool completely.
  9. If desired, sprinkle with powdered sugar.
