Hungarian Pogácsa

Ingredients

  • 2 cups all-purpose flour, plus extra for dusting
  • ½ cup unsalted butter, cold and cubed
  • ½ cup sour cream
  • 1 large egg, beaten for egg wash
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ cup grated cheese (like cheddar or parmesan), optional

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, and salt.
  3. Add cold, cubed butter to the flour mixture and work it in until the mixture resembles coarse crumbs.
  4. Stir in sour cream and grated cheese (if using) until a dough forms.
  5. Chill the dough for 30 minutes in the refrigerator.
  6. On a lightly floured surface, roll out the dough to about ½-inch thickness.
  7. Use a round cookie cutter to cut out circles, about 2 inches in diameter.
  8. Place on the prepared baking sheet.
  9. Brush the tops with beaten egg wash for a golden finish.
  10. Bake for 15-20 minutes until puffed and golden brown.
  11. Remove and let cool on a wire rack for at least 5 minutes before serving.

Notes

Unbelievably flaky and tender with a rich, buttery flavor and a hint of tang from the sour cream. Serve warm with a dollop of sour cream or alongside soup.
