Scalloped Spinach

Ingredients

  • 2 (10 oz.) pkgs. of frozen chopped spinach
  • 3 beaten eggs
  • 3/4 cup of milk
  • 3/4 cup of shredded American cheese
  • 3 tbsp. of chopped onion
  • 1 tsp. salt
  • dash of pepper
  • 1 cup of coarse soft bread crumbs
  • 1 tbsp. of butter or margarine

Instructions

  1. Cook spinach following directions on the package. Drain well.
  2. Combine eggs, milk, and 1/2 cup of cheese, onion, salt, and pepper.
  3. Stir in the drained spinach.
  4. Turn into greased 8x8 inch baking pan.
  5. Combine crumbs, remaining 1/4 cup of cheese, and butter.
  6. Sprinkle on top of spinach.
  7. Bake at 350 degrees for 25 minutes or until knife inserted in center comes out clean.
  8. Let stand for 5 minutes before serving.
