Stuffed Jalapeño
Ingredients
- 1 pound flaked crab meat
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 1 clove minced garlic
- 1/4 cup milk
- 1 egg
- 1/4 cup cracker meal
- 12 fresh jalapeños
- 1 dill pickle
- 1/4 cup onions, finely chopped
Instructions
- Cut peppers in half lengthwise. Boil peppers for approx 5 minutes and cool slightly. Using fresh peppers, discard paring seeds and core carefully.
- In a large mixing bowl, combine crab meat, pickle, onions, and seasonings carefully.
- Stuff pepper halves with crab mixture and press stuffing around pepper. Set peppers aside.
- Prepare breading mixture. In a large mixing bowl, mix 1 egg, 1/4 cup milk, and 1/4 tsp each salt and pepper.
- Dip peppers in egg mixture, then cracker meal. Repeat procedure.
- Deep fry at 365 degrees until golden brown. Drain on absorbent paper.
- Makes approx 2 dozen hors d'oeuvres.
